Pickled Cherry Tomatoes for Winter

A wonderful appetizer for the festive table! Pickling cherry tomatoes for winter is not as difficult as it may seem. The process is quick, the result is incredibly tasty! These tomatoes disappear from the table instantly, so it’s best to prepare a double or triple batch. They go perfectly with potatoes, meat, and more!

Step 1
Hot chili pepper can be omitted if desired.
Step 2
Choose juicy but firm cherry tomatoes. If possible, take different colors to make the jars look brighter and more appetizing.

The tomato amount is approximate. To measure, fill your prepared jars completely with cherry tomatoes, then pour them back into a bowl. Remove stems and wash in cold water. Before placing them in jars, pierce each tomato in a few spots with a toothpick so skins don’t burst when hot brine is added.

Peel garlic. Rinse chili pepper, garlic cloves, parsley, and dill flower heads.
Step 5
Place several chili pepper rings, a dill flower head, and parsley sprigs on the bottom of each clean, sterilized jar.
Step 6
Add several garlic cloves and 3-5 black or allspice peppercorns to each jar. Then fill jars with cherry tomatoes.
Step 7
Pour boiling water over tomatoes to the top, cover with sterile lids, and leave for 20–30 minutes.
Step 8
Carefully drain the water into a pot. Bring to a boil over high heat.
Step 9
Pour boiling water over tomatoes again, cover with lids, and let stand for another 20 minutes.
Step 10
Drain the water from jars into the pot again. Add salt and sugar. Bring the brine to a boil and keep on heat for about 2 minutes.
Step 11
Pour the hot brine into jars, filling to the top. Add a pinch of citric acid (about ⅛ teaspoon) into each jar.
Step 12
Seal jars tightly with lids using a key or sealer. Turn jars upside down, wrap in a warm blanket, and leave until fully cooled. Then store in a cool place for long-term keeping.
