Preparation

For this recipe, I used allspice, cloves, bay leaf, and garlic. Feel free to omit any of these based on your preference.

How to pickle cauliflower in jars for winter? Prepare all ingredients from the list. I used allspice, cloves, bay leaf, and garlic, but you can skip any of them if desired.

In a pot, bring water to a boil. Add cauliflower florets and blanch them for 30-60 seconds.

Drain the cauliflower using a colander. Let it rest while you prepare other ingredients. Peel carrots and garlic, then rinse and slice them into rounds or half-rounds.

Add the sliced carrots and garlic to the cauliflower.

For extra aroma, use fresh herbs. I used a small bunch of parsley and a few basil flowers.

In a separate pot, bring 2 cups (500 ml) of water to a boil. Add salt, sugar, allspice, cloves, and bay leaf. Pour in vinegar and let it simmer briefly.

Add the cauliflower, carrots, garlic, and herbs to the boiling marinade. Let everything simmer for about one more minute.

Sterilize jars and lids using any method you prefer. Fill the jars with the vegetable mix.

Pour the hot marinade into the jars to the top. Immediately seal with sterile lids and turn jars upside down. Wrap them in a towel or blanket and leave to cool completely.

Store the cooled jars in a dark, cool place for long-term storage.
