How do you cook pearl barley porridge with water in a pot? Prepare all the necessary ingredients. Choose good-quality pearl barley from a reliable producer. It is even better if it is a more refined type of pearl barley. Use butter with a fat content of at least 82.5%.

Rinse the grains well. To make the porridge fluffy, rinse the grains until the water runs completely clear. Pearl barley takes quite a long time to cook, but to speed up the process, you can soak it in cold water for several hours. It is convenient to soak it overnight. Then drain the soaking water.

Put the grains into the pot for cooking. I recommend using cookware with a thick bottom so nothing burns.

Pour in the water. Add enough water so it stands about 2 cm, about 3/4 inch, above the level of the grains.

Salt the water.

Bring it to a boil over medium heat. Be sure to skim off the foam.

Then reduce the heat to the lowest setting and cover the pot with a lid. The grains will take about 1 1/2 hours to cook until done. But if you soaked them beforehand, the cooking time may shorten to 30–40 minutes.

The water should evaporate completely, and the pearl barley should turn out fluffy, with each grain separate.

Add the butter to the porridge, wait until it melts, stir, cover with a lid, and let it stand for another 10 minutes. For a lean version, drizzle the porridge with any vegetable oil: olive, sunflower, or any other kind. I personally like unrefined sunflower oil best.
