Pearl Barley Porridge with Meat in a Multicooker

Step 1
What meat to choose? Any kind you like will work: pork, beef, veal, chicken, or turkey. I used pork neck.
Step 2
First, soak the pearl barley in cold water for about 1 hour. You can soak longer, but in the multicooker the grains soften well during cooking.
Step 3
Rinse the meat in cold water and pat dry with paper towels to remove moisture. Cut pork into small even cubes. Pour vegetable oil into the multicooker bowl and set to “Fry” mode. Once the oil is hot, add the meat. Cook, stirring, until golden.
Step 4
Meanwhile, peel onion, carrot, and garlic. Rinse and pat dry. Chop vegetables. I prefer cutting onion into large cubes, carrot into thick sticks, and mincing garlic with a knife. You can chop the onion finely, grate carrot, or press garlic if you prefer.
Step 5
Add the chopped vegetables to the meat and fry everything together for 5-7 minutes, stirring occasionally to prevent burning.
Step 6
Drain the soaking water from the barley and rinse again. Add it to the multicooker along with the meat and vegetables. Season with salt and your favorite spices. I used cumin and ground paprika.
Step 7
Pour in water or broth so it covers the barley by about 0.6-0.8 inches (1.5-2 fingers). Stir well. Close the multicooker lid and set to “Stew” or “Pilaf” mode. Cook until the timer signals (mine set automatically to 1 hour). After the signal, open the lid, stir again, close, and let stand 10-15 minutes.

Before serving, sprinkle with finely chopped herbs - green onion, parsley, or dill are great choices.
Step 9
Optionally, sprinkle with ground allspice. Done!
