Pear Jam for Winter
Easy, quick, healthy, aromatic, and very tasty! Pear jam is a simple sweet preserve for winter. It’s made without sugar - stevia, a natural sweetener, is used instead, making the jam not only delicious but also healthy.

Preparation
Step 1
Choose soft, sweet pear varieties, preferably yellow ones. Instead of stevia, you can use regular sugar if you prefer. Lemon juice adds a pleasant tartness and acts as a natural preservative for longer storage - adjust the amount to taste.
Step 2
Wash the pears thoroughly and pat dry. Peel them, remove the cores and seeds, and cut into pieces.
Step 3
Place the pear pieces in a pot and pour in boiling water just enough to cover them. Use an enamel or stainless-steel pot - avoid aluminum as it can react with the acid.
Step 4
Place the pot on low heat. Bring to a boil and simmer for 15 minutes, skimming off any foam that forms.
Step 5
Add the stevia to the pears and stir until fully dissolved.
Step 6
After 15 minutes, remove the pot from the heat and mash the pears with a potato masher until smooth. Return the pot to the stove and simmer over low heat for another 20 minutes, stirring occasionally.
Step 7
Add lemon juice - squeeze it from one lemon wedge - and stir. Continue cooking for another 20 minutes on low heat, stirring more frequently to prevent burning.
Step 8
The pear jam should thicken and begin to caramelize slightly. Once it reaches the desired consistency, remove it from heat. Immediately pour the hot jam into sterilized jars, seal with sterilized lids, and store in a cool, dry place.
