Peanuts in Sugar

Quick, simple, and inexpensive - even a child can make it! Peanuts in sugar are a crunchy treat that’s easy to prepare at home. Much tastier and more natural than store-bought, and the process takes little time.

Preparation
Step 1
Any peanuts will do - fresh, roasted, shelled, or unshelled. If raw, rinse and pat dry with a paper towel. I used salted roasted peanuts, I like the salty-sweet combo. Use equal parts sugar and water.
Step 2
Pour sugar into a bowl, add the same amount of water. Stir with a spoon until dissolved. You can let it sit for 5 minutes so it dissolves better.
Step 3
Heat a skillet (preferably thick-bottomed and non-stick). Add the peanuts. Roast over medium heat until lightly golden if raw. If unshelled, wait until the skins loosen, remove them, then return to the skillet. If already roasted, just heat them through.
Step 4
Pour the sugar water into the skillet. It will boil immediately. Don’t stir - just wait until the liquid evaporates and the sugar turns to caramel.
Step 5
This takes about 10-15 minutes. Stir occasionally so peanuts cook evenly.
Step 6
The sugar will start to brown, peanuts will roast, and the mixture will thicken.
Step 7
Once no liquid remains and peanuts are evenly coated in caramel, lower the heat and stir constantly. Don’t worry if the caramel looks liquid - it will harden once cooled. Turn off the heat.
Step 8
Don’t leave peanuts to cool in the skillet - caramel will harden too much. Instead, spread them onto a plate greased with oil. Once cooled, break into pieces. Store in a sealed container. Enjoy!
