Pea Soup with Smoked Chicken
Thick, aromatic, rich, and incredibly tasty! Pea soup with smoked chicken is a simpler take on a beloved first course. There’s no need to cook a separate meat broth - the chicken is added already cooked. You can adjust the thickness by changing the amount of peas.

Step 1
How do you cook pea soup with smoked chicken? Prepare the ingredients. Any smoked chicken parts work - drumsticks, thighs, or leg quarters. Use yellow split peas; they break down better and faster. Adjust the amount depending on whether you want a thick soup or a lighter one.
Step 2
Put the peas into a soup pot and rinse well until the water runs clear. I don’t soak split peas - they soften well without it. Cut the meat off the chicken bones. Put the bones into the pot with the peas; cut the meat into pieces. I removed the skin.
Step 3
Pour clean cold water over the peas and bones. I like a thick soup, so I used a lot of peas and less water - about 2 liters (about 8½ cups). Adjust the water to your preference. Set the pot over low heat.
Step 4
Once it comes to a boil, skim off the foam with a spoon. Cover with a lid and keep the heat low. Cook the peas for 40 minutes to 1 hour, until soft. If needed, add hot water if the level drops.
Step 5
While the peas cook, make the sautéed vegetables. Peel and finely dice the onion. To keep it from stinging your eyes, rinse the onion and the knife with cold water.
Step 6
Wash and peel the carrot, then grate it on a coarse grater.
Step 7
Wash the bell pepper, cut it open, and remove the core and seeds. Slice the flesh into thin strips.
Step 8
Heat a skillet over medium heat and add vegetable oil. Sauté the vegetables, stirring, for about 10 minutes, until soft.
Step 9
Wash and peel the potatoes, then cut into cubes.
Step 10
Add the potatoes to the soup. Cook for 20 more minutes, until the potatoes are tender.
Step 11
Then remove the bones from the soup and add the sautéed vegetables and the chopped meat. Salt to taste. You can also add your favorite spices and a bay leaf. Simmer over low heat for 10 minutes, then cover, turn off the heat, and let it stand for 10 minutes.
