Pea Porridge Cooked in Water
Inexpensive, appetizing and made from everyday ingredients! Pea porridge has been enjoyed in Eastern Europe for centuries. Peas are rich in protein and contain a variety of valuable nutrients. This simple plant-based dish is suitable for fasting periods and many different diets.

Preparation
Step 1
Prepare the ingredients. You can use any dried peas, either green or yellow, depending on the color you want the porridge to be. Split peas are preferable because they cook more quickly.
Step 2
Sort through the peas, removing any debris and damaged peas. Rinse them thoroughly several times, until the water runs clear.
Step 3
Cover the peas with warm water and leave them to soak for 7–8 hours. Drain the soaking water, then rinse the peas once more.
Step 4
Place the peas in a saucepan and pour in the hot water. Add the bay leaves.
Step 5
Place the saucepan over low heat and bring the water to a boil. Cook the peas for about 1–1½ hours, skimming off any foam that rises to the surface. If all the water evaporates before the peas are tender, add another ⅓ cup plus 1 tablespoon of boiling water. Cook until the porridge reaches your preferred consistency. The peas can be completely broken down or left partially intact for a more textured porridge.
Step 6
Remove the bay leaves. Season the porridge with salt, add the vegetable oil and mix well. If you do not need the dish to be plant-based or suitable for fasting periods, you can use butter instead.
Step 7
Divide the pea porridge among plates and serve.
