Pea Cutlets in a Pan

Preparation
Step 1
It’s best to use split peas rather than whole ones - they cook faster.
Step 2
Rinse the peas thoroughly, then soak them overnight in cold water. Drain. Place the peas in a pot, add 3 cups of water, and bring to a boil. Cook over medium heat until tender. Add salt near the end of cooking when the peas are almost soft; salting too early can slow down cooking.
Step 3
Drain the cooked peas in a sieve to remove excess water.
Step 4
Peel and finely dice the onion.
Step 5
Wash, peel, and grate the carrot using a medium or coarse grater.
Step 6
In a skillet, heat vegetable oil over medium heat and sauté the onion for about 5 minutes, stirring occasionally.
Step 7
Add the grated carrot to the pan, mix, and continue cooking over medium heat until the vegetables are soft.
Step 8
In a large bowl, combine the peas and the sautéed vegetables.
Step 9
Blend the mixture using an immersion blender until smooth.
Step 10
Add the egg and flour, salt to taste, and mix well. You can also add your favorite spices.
Step 11
Let the mixture rest for 15 minutes to allow the flour to absorb moisture. The pea mixture should be thick and soft - don’t add too much flour, or the patties will be tough.
Step 12
Wet your hands with water and shape the mixture into round or oval patties. Coat each patty lightly with flour on both sides.
Step 13
Heat vegetable oil in a skillet and add the patties. Fry over medium heat for 3-4 minutes until golden and crispy.
Step 14
Flip and cook the other side until done.
Step 15
Serve warm with fresh vegetables and herbs. Enjoy!
