Pasta with Sour Cream and Cheese

Simple, quick, affordable, and incredibly tasty! Pasta with sour cream and cheese is an unusual dish but definitely worth trying. The sauce makes it juicy, aromatic, and rich. Can be served on its own or as a side dish.

Preparation
Step 1
You can use pasta of any shape; I’m using penne. Choose pasta made from durum wheat – it’s healthier and keeps its shape when cooked. Use sour cream of any fat percentage. Always pick natural, quality ingredients.
Step 2
Fill a large pot with cold water (about 1 quart per 3.5 oz of pasta). Bring it to a boil over high heat. Once boiling, salt generously and add the pasta. Stir immediately to prevent sticking. Cook until al dente – firm to the bite. Use the package time as a guide.
Step 3
While the pasta cooks, prepare the sauce. Grate cheese on a medium grater. Any cheese will work – hard, semi-hard, or soft like mozzarella – as long as it's tasty and melts well.
Step 4
Place the grated cheese into a bowl, reserving a bit for serving. Add sour cream and mix well.
Step 5
Once the pasta is done, drain it in a colander. Return it to the pot and, while still hot, add butter. Stir until melted.
Step 6
Wait a couple of minutes, then add the sour cream and cheese sauce. Mix everything well and serve immediately.
Step 7
This creamy pasta goes great as a side dish with meat or fish, but it can also be served on its own. Optionally, top with chopped herbs, the reserved cheese, and ground black pepper. Enjoy!
