Preparation
Step 1
Any pasta shape will work; I used spaghetti. Choose high-quality pasta made from durum wheat - such pasta tastes better and won’t get mushy.
Step 2
First, put a pot of water on the stove to boil for the pasta. While it heats, grate the cheese on a coarse grater. Use good-quality natural cheese that melts well - hard or semi-hard.
Step 3
Crack the egg into a bowl. Beat lightly with a fork until smooth. Add a little salt and ground black pepper. Remember, the cheese also contains salt, so don’t overdo it. Mix again.
Step 4
Add the grated cheese to the egg. Stir well.
Step 5
Once the water boils, salt it and add the pasta. Stir immediately to prevent sticking. Cook the pasta over medium heat according to the package directions, stirring occasionally. Do not overcook - the pasta should remain slightly firm (al dente).
Step 6
Transfer the cooked pasta to a skillet (preferably nonstick so the cheese won’t stick). Add a little pasta cooking water to prevent dryness. Pour in the egg-cheese mixture. Reduce the heat to very low so the egg doesn’t scramble but instead turns into a sauce. Stir constantly until the cheese melts completely, then turn off the heat.
Step 7
Immediately transfer the pasta to plates, sprinkle with ground black pepper, and serve. Enjoy!
