Papaya honey lassi
A refreshing papaya lassi blended into a smooth, creamy drink and topped with crushed pistachios for a lightly nutty finish.

Preparation
Step 1
Add all of the ingredients, except for the pistachios, to a blender and blend until smooth and creamy, creating a salmon-pink purée.
Step 2
Using a pestle and mortar, crush the pistachios into a coarse, nutty crumble. Pour the papaya lassi into tall glasses and sprinkle the crushed pistachios over the top.
Step 3
Serve straight away.
