Pancakes with Onion and Carrot

Preparation
Step 1
Prepare the ingredients. Choose a large, juicy carrot. You’ll need one onion, but you can adjust the quantity to taste. The amount of flour may vary depending on the carrot's juiciness. If your carrots are dry, you may need a little kefir to thin the batter.
Step 2
Wash, peel, and dry the carrot. Grate it using a medium grater. A large grater will make the pancakes coarser and take longer to cook, while a fine grater will turn the carrot into a puree. You can also blend it in a food processor if preferred.
Step 3
Peel and grate the onion as well. If you like a stronger onion flavor, dice it instead of grating.
Step 4
In a bowl, combine the grated carrot and onion. Add one egg, salt, and pepper to taste. If making these for children, you can skip the pepper. Mix well. If the mixture is too dry, add a little kefir (about 2 tablespoons).
Step 5
Gradually add flour. Start with one tablespoon, mix, then add another. The batter should be smooth and hold together. If it’s too loose, add a bit more flour.
Step 6
Heat a frying pan over medium heat and add vegetable oil. Drop one tablespoon of batter per pancake, shaping them into small, even rounds. Keep them thin, so they cook properly inside.
Step 7
Fry the pancakes until golden brown on one side (about 5 minutes), then flip and cook the other side. Repeat for the remaining batter, adding more oil if needed. From two medium carrots, I got eight pancakes.

Serve warm with sour cream. Enjoy your meal!
