Pancakes with Milk without Yeast

Delicious, tender, and simple - perfect for a family breakfast! Pancakes with Milk without Yeast are made using a classic recipe and come out very thin. Thanks to resting the batter before frying, the pancakes don’t tear and flip easily. They’re also great for stuffing.

Preparation
Step 1
The amount of flour and milk in this recipe is measured precisely - no need to adjust. Use neutral-tasting oil.
Step 2
Take a mixing bowl and crack in the eggs. Add sugar and salt. Adjust sugar to taste - with two tablespoons the pancakes are noticeably sweet. Beat eggs with sugar and salt using a whisk.
Step 3
Add 150 ml (about ⅔ cup) of milk to the beaten eggs and whisk.
Step 4
Sift all the flour into the egg-milk mixture. Mix with a whisk. The batter will be thick – this is correct. This method prevents lumps in the pancake batter.
Step 5
Gradually add the remaining milk (about 1 ½ cups), whisking well after each addition. A simple hand whisk works fine - no need for a mixer. The result should be a smooth, lump-free, liquid batter. Add vegetable oil and mix - this prevents sticking to the skillet. Let the batter rest for at least 30 minutes so pancakes don’t tear when flipped.
Step 6
Even better - refrigerate the batter overnight. Very convenient: mix the batter in the evening, fry pancakes in the morning. In the morning, stir the batter well. Heat a pancake skillet over high heat. Add a few drops of vegetable oil. Pour in a small portion of batter, tilting the skillet in circles to spread evenly. Adjust thickness as you like.
Step 7
Fry the pancake on one side until golden, then flip to the other. Remove the finished pancake onto a plate. Pour the next portion of batter - no need to oil again since the batter already contains oil. Cook all the pancakes this way. Adjust heat so they cook quickly without burning. From this amount of batter, I got 14 pancakes using an 18 cm (7-inch) skillet.
Step 8
Serve pancakes with sour cream, honey, jam, or sweetened condensed milk. Enjoy!
