Prepare the necessary ingredients according to the list.

Wash the zucchini thoroughly, scrubbing it with a brush. If the zucchini is young with soft skin and small seeds, peeling is not necessary. If it is large and overripe, with a tough skin and large seeds, peel and remove the seeds. Grate the zucchini using a coarse grater, add salt, and let it sit for 10 minutes. Then, squeeze out the excess juice and drain it.
Step 3
In a bowl, combine the grated zucchini, eggs, baking powder, and ground pepper. Mix everything well.

Add the sifted flour to the zucchini mixture and mix thoroughly. You may need more or less flour depending on consistency. The batter should be thick but still fluid.

For the filling, you can use any minced meat: turkey, pork, beef, or a mix. Feel free to add your preferred spices.

Peel and finely chop the onion. If you or your children don’t like onions, you can skip them.

In a bowl, combine the minced meat, chopped onion, water, salt, and pepper. Mix thoroughly with your hands until smooth.

Heat vegetable oil in a pan over low heat. Use a spoon to place the zucchini batter in the pan, spreading it into a thin, even circle. Add a little minced meat in the center and flatten it.

Cover the meat with another spoonful of zucchini batter.

Fry the pancakes with the lid on, turning them until both sides are golden brown and the meat is fully cooked.
