Pan-Fried Yeast Pastries with Potato Filling
Delicious vegan pastries made with potato cooking water! They turn out soft, golden and just as flavorful as pastries prepared with milk. This simple recipe is suitable for fasting periods or a plant-based menu.

Preparation
Step 1
First, prepare the filling. Peel and thoroughly rinse the potatoes, then cut them into pieces. Place them in a saucepan, cover with water and boil in salted water until tender. Peel and chop the onion. Fry it in vegetable oil until soft and golden. Drain the potatoes, reserving the cooking water in a separate container for the dough. Mash the potatoes, add the fried onion and mix thoroughly. The filling is ready.
Step 2
Prepare the dough. Pour the warm potato cooking water into a deep bowl. Add the salt, sugar, fresh yeast and vegetable oil, then mix with a spoon. Gradually add the sifted flour and knead until you have a soft, slightly sticky dough. Knead in a little sunflower oil, then leave the dough in a warm place to rise.
Step 3
Once the dough has doubled in size, begin shaping the pastries. Divide the dough in half and roll each half into a thick log. Cut the logs into pieces and shape each piece into a ball. Roll each ball into a small round and place some mashed potato filling in the center. Bring the edges together and pinch them firmly closed, forming an oval pastry.
Step 4
Heat enough vegetable oil in a frying pan to reach halfway up the sides of the pastries. To check whether the oil is hot enough, add a small piece of dough. Once it begins to brown, you can start frying. Cook the pastries over medium heat on both sides until evenly golden brown
Step 5
Place the cooked pastries on paper towels, if desired, to absorb excess oil. Transfer them to a serving plate and serve hot.
