Pan-Fried Squid with Potatoes
Quick, simple and full of flavor, this pan-fried squid and potato dish makes an easy family dinner. You can vary the vegetables according to the season, replacing the bell pepper with carrot if desired.

Preparation
Step 1
Prepare the ingredients. Thaw the squid beforehand. Use any fresh herbs and spices you like. You can replace the bell pepper with carrot if desired.
Step 2
Wash and peel the potatoes, then cut them into thin strips.
Step 3
Place the potatoes in a preheated frying pan with vegetable oil.
Step 4
Cook over medium heat, stirring occasionally, until the potatoes are tender and golden. Remove the pan from the heat once done.
Step 5
Peel the onion and cut it into half-rings.
Step 6
Heat a little vegetable oil in a second frying pan and cook the onion until golden.
Step 7
Remove the seeds and stem from the bell pepper, rinse it and cut into thin strips.
Step 8
Add the pepper to the onion and cook together. Add one whole garlic clove, lightly crushed.
Step 9
Clean the squid thoroughly, removing the inner and outer membranes as well as the transparent cartilage.
Step 10
Cut the squid into thin strips.
Step 11
Add the squid to the vegetables and cook for no longer than 1 minute.
Step 12
Add the cooked potatoes to the squid and vegetables, leaving as much excess frying oil behind as possible. Mix and cook everything together for another 1 minute. Squid cooks very quickly, so 2–3 minutes in total is enough for thawed squid.
Step 13
Finely chop the fresh herbs.
Step 14
Sprinkle the squid and potatoes with the chopped herbs, remove from the heat and serve immediately while hot.
