Pan-fried salmon

Preparation
Step 1
Melt the butter in a frying pan over a medium heat. Place the salmon in the pan skin-side down, season with salt and freshly ground black pepper, and squeeze over a little lemon juice.
Step 2
Cook for 2-3 minutes, then turn the salmon and fry for another 1-2 minutes, or until just cooked through. Add a little more lemon juice and taste, adjusting the seasoning if needed. Remove the salmon from the pan and set aside.
Step 3
Serve fried fish with rice and fresh vegetable salad for a healthy and filling lunch.
