Pan fried puffy buns

Delicious and hearty yeast pastries! Fried pirozhki soft as fluff turn out golden and appetizing. You can fill them with sweet or savory fillings and serve as a snack or dessert.

Preparation
Step 1
Sift the flour through a sieve beforehand to aerate it.
Step 2
To make the dough, slightly warm the kefir (about 95°F / 35°C). Pour it into a mixing bowl and add two eggs.
Step 3
Add vegetable oil, salt, sugar, and dry yeast.
Step 4
Add a couple of tablespoons of flour from the total amount. Mix everything, cover with a towel, and leave in a warm place for about 20 minutes for the yeast to activate and fermentation to begin.
Step 5
The yeast mixture will start to bubble as it warms.
Step 6
Gradually add the sifted flour and knead the dough. The amount of flour depends on the texture - it should be soft, elastic, and not sticky. Sprinkle a bit of flour on top, cover with a towel, and let it rise in a warm place for 1 hour.

While the dough is rising, prepare the filling. Finely shred the cabbage and place it in a hot skillet with a bit of water. Cover and simmer for 15 minutes.
Step 8
Peel and grate the carrot, then add it to the cabbage. Pour in tomato juice. Season with salt and ground pepper to taste. Stir and cook uncovered for another 10 minutes so the excess liquid evaporates.

Let the finished filling cool to a warm temperature.

After an hour, the dough will have risen significantly.
Step 11
Divide the dough into portions and shape each into a small flat circle. Place filling in the center, pinch the edges together, and form a bun.
Step 12
Shape all the buns. You can make them any size you like. Let them rest for 3-5 minutes.

Heat vegetable oil in a skillet and fry the buns over medium heat on all sides until golden brown.
Step 14
The golden, fluffy buns are ready! Place them in a large bowl and cover with a towel to let them steam slightly. Enjoy your meal!
