Pan-Fried Pollock with Onions
A simple, inexpensive, and quick dinner for the whole family. Pollock fillet with onions cooked in a skillet is one of those must-have dishes for any home cook. A budget-friendly and light meal can also be delicious. This fish proves it perfectly. Just two main ingredients and 20 minutes of free time.

Preparation
Step 1
Start by slicing the onion. Before that, peel it, rinse it, and dry it with a paper towel. The slicing itself can be any shape you like. I chose half-rings. There should be plenty of onion, because it is essentially one of the main ingredients, but you can use more or less to taste. To avoid tears while slicing, rinse the onion and the knife with cold water. The cutting board will not absorb the onion smell if you rub it with a piece of lemon beforehand.
Step 2
Rinse the thawed pollock fillet under running water and pat it dry with paper towels. This is done to remove excess moisture, which would only interfere with frying the fish. If you do not have fillet, gut the pollock, remove the black membrane inside, which can taste bitter, rinse it, and dry it inside as well. Then cut it into portion-sized pieces. If you have fillet, cut it into pieces right away.
Step 3
Pour the wheat flour onto a flat plate. Any type will work. It is better to sift the flour through a sieve so there are no lumps. Add salt and dried herbs to taste. I used basil and oregano. The herbs will add their own flavor note to the finished dish. Mix the flour. The coating is ready.
Step 4
Heat a suitably sized nonstick or cast-iron skillet over high heat. Then pour in the oil and heat it well, after which reduce the heat to medium. Coat the pollock pieces in the flour mixture on all sides.
Step 5
Place the fish in the skillet and fill the spaces between the pieces with onion. Fry the fish for about 5-7 minutes until a golden crust forms. Adjust the heat to suit your stove, whether medium or low, so the fish does not burn but still cooks through well. If you like, you can add carrot.
Step 6
How long should you cook pollock in a skillet? Turn the fish with a spatula and fry it on the other side for about another 5–7 minutes. The fish should also become golden. The cooking time is approximate and may vary significantly depending on the stove, skillet, and amount of ingredients. For example, I fried the fish in two batches because the entire amount did not fit at once. Remove the cooked pollock fillet from the skillet and serve it together with the fried onion.
Step 7
Serve the pollock with mashed potatoes, pouring all the aromatic juices from the skillet over it. For a lighter dinner, serve it with stewed vegetables. For a heartier meal, choose rice or buckwheat. And if you want extra juiciness, make a simple sour cream sauce with dill and garlic or drizzle the dish with lemon juice. Store the cooled dish in the refrigerator in a sealed container for about 24 hours. Enjoy your meal!
