Advice
Washed and peeled mushrooms should be placed on a kitchen towel to absorb excess moisture. Let them sit for 15–20 minutes so the fabric absorbs all the liquid. It is important to dry the mushrooms well, otherwise they will become watery after absorbing moisture.
Preparation
Step 1
What kind of meat can be used besides pork? Any – beef, lamb, chicken, or turkey. Just note that calories and cooking time will vary. You can also use your favorite spices.
Step 2
Wash the meat, pat dry, and cut into medium cubes. Use boneless pork (such as ham, shoulder, loin, or tenderloin). I used ham.
Step 3
Wash and dry the mushrooms. Cut large ones into quarters or smaller; leave small ones whole. Prefer young, fresh mushrooms. Other mushrooms can be used but may require boiling first.
Step 4
Slice the onion into half rings or small cubes – however you prefer.
Step 5
Wash and dry the cilantro, then finely chop it. You can substitute or combine with dill, parsley, mint, or a mix of herbs.
Step 6
Peel and finely chop the garlic. You can use 1 tbsp of dried garlic instead.
Step 7
Heat vegetable oil in a pan over high heat. Add onions and sauté, stirring, until translucent.
Step 8
Add the pork to the pan. Fry over high heat, stirring occasionally, for 5–6 minutes until golden brown.
Step 9
Sprinkle dried thyme over the meat and stir.
Step 10
Add mushrooms and fry together, stirring, for 5–7 minutes or longer until excess moisture evaporates. Timing depends on meat cut, chunk size, and your equipment.
Step 11
Season with salt and pepper, then stir. Turn off the heat.
Step 12
Sprinkle chopped garlic and cilantro over the dish and stir again.
Step 13
Cover the pan with a lid and let the meat rest for 10–15 minutes.
Step 14
Serve the pan-fried pork with mushrooms and onions on plates with any side dish you like. Enjoy your meal!
