Pan-Fried Lavash Wrap with Filling
Quick, very simple and very tasty - perfect for breakfast! Pan-fried lavash with filling works for many occasions: breakfast, dinner or a snack. You can take it on the road, to work, to school or on a picnic. And you can make the filling from almost anything you like!

Step 1
How to pan-fry lavash with filling? First, prepare the filling. Sort the mushrooms, clean them, rinse and cut into small pieces. Wash the pepper, remove the stem and seeds, and cut into thin strips. You can use red, green or yellow pepper - any kind. I used 2 peppers for 100 g, so you can combine two colors, or use three smaller peppers and combine three colors to make the snack brighter.
Step 2
Grate the cheese on a coarse grater. Mine was paprika-flavored cheese with reddish specks, but you can use any cheese you like, with or without add-ins.
Step 3
Heat 3 tablespoons of vegetable oil in a skillet. Add the prepared mushrooms and pepper, stir, salt to taste, and fry over high heat for about 5 minutes, stirring constantly.
Step 4
Cut the thin lavash crosswise with scissors (it’s easier) into 3 equal parts along the fold: I got three rectangular sheets about 20 × 40 cm (about 8 × 16 in). You can use plain lavash or a reddish tomato-flavored lavash.
Step 5
Take one sheet of lavash and spread it with sour cream - about 2 tablespoons per sheet. I used 20% sour cream. Instead of sour cream, you can use plain unsweetened yogurt, mayonnaise, ketchup, or any sauce you like.
Step 6
Place one third of the pepper-and-mushroom filling along the edge of the lavash.
Step 7
Sprinkle the filling with one third of the cheese.
Step 8
Fold the edges of the lavash over the filling, along the length.
Step 9
Roll the lavash up into a tight roll like this.
Step 10
Heat 1 tablespoon of vegetable oil and 1 tablespoon of butter in a skillet. If you use only butter, it may burn and the lavash can turn dark; if you use only oil, it won’t taste as rich. Fry the roll over medium heat for 2-4 minutes per side. The cheese will melt, and the lavash will toast nicely and turn golden. Remove the cooked roll from the skillet and fry the other two rolls the same way.
