Pan-Fried Flatbreads with Suluguni

Crispy outside, cheesy inside! These quick and easy flatbreads are made with kefir-based dough and fried to golden perfection.

Preparation
Step 1
Prepare the ingredients. Any fat content of kefir will work; take it out of the fridge in advance—it mixes better when warm. Use refined, odorless oil. The amount of flour may vary, so adjust it based on the dough consistency.
Step 2
First, prepare the dough. How to make it? Pour kefir into a bowl and crack in an egg. Mix well with a fork.
Step 3
Take about half of the flour, add salt and baking powder, and mix. Gradually add this mixture into the liquid ingredients, stirring gently with a fork. Pour in vegetable oil and mix. The dough will still be wet, as only half of the flour has been added. Start adding the remaining flour gradually, kneading the dough as you go.
Step 4
When the dough becomes too thick to mix with a fork, switch to kneading by hand. It will slowly become smoother and stop sticking to your hands. Once this happens, stop adding flour. Shape the dough into a ball, place it in a bowl, cover with a towel, and let it rest for 30 minutes. This allows the gluten to develop, making the dough more elastic and easier to work with.

While the dough is resting, grate the suluguni cheese on a coarse grater.

Roll out the rested dough on a floured surface into a thin sheet, about 3mm thick.

Sprinkle the cheese evenly over the dough.

Roll the dough tightly into a log, starting from the long side.
Step 9
Cut the log into equal pieces, about 5-6 cm wide. I divided the dough in half first and worked with one portion. Each half yielded 8 pieces.
Step 10
Dip each piece in flour, place it vertically, and roll it out into a thin flatbread.
Step 11
Heat a thick-bottomed pan over medium heat. Place the flatbread into the pan.
Step 12
Fry it on both sides until golden brown, then transfer to a plate. While still hot, you can brush with butter for extra flavor. Repeat with the remaining dough pieces.

Serve the flatbreads warm with kefir or tea. Enjoy your meal!
