Pan-Fried Fish with Mushrooms

Preparation
Step 1
I used Sea Dragon fish, freshly caught, not frozen. Any fish can be used. If frozen, thaw at room temperature first.
Step 2
First, trim the sharp and long fins. Best done with large scissors while wearing gloves. Gut the fish, remove scales, rinse thoroughly under cold running water, and pat dry with paper towels.
Step 3
Cut off heads and tails. If planning to use for stock or fish soup, remove gills and freeze the heads for later. Rub fish with salt and pepper to taste on all sides.
Step 4
Heat a small amount of refined oil in a heavy-bottomed skillet. Place fish in the pan. Reduce heat to medium and fry 6-8 minutes until a golden crust forms.
Step 5
Carefully flip the fish with a spatula and cook another 8 minutes. Cover the pan with a lid during the last minute. Remove the fried fish to a separate plate.
Step 6
In the same pan, add sliced mushrooms and finely chopped onion. Lightly salt, add spices, and sauté over high heat for several minutes until cooked.
Step 7
Place the mushrooms and onions over each fish. Pepper to taste and serve!
