Pan-Fried Dumplings Manty

Delicious and juicy, perfect for a family dinner! Manty cooked in a pan are just as good as those made in a steamer. This recipe is a great solution when you're short on time or can't use a steamer. Potatoes are added to the filling, making it juicier and more satisfying.

Preparation
Step 1
Start with the dough. The amount of flour is approximate; you may need more or less. Adjust as you go.
Step 2
Sift the flour into a bowl. Even though the dough doesn't need to rise, sifting improves its texture. Make a well in the center, add salt, and gradually pour in water while mixing with a fork. Start kneading with the fork, then switch to hands. I began in the bowl and then moved the dough to a board.
Step 3
Add more flour as needed while kneading until the dough stops sticking to your hands. It should become smooth, elastic, and uniform. Shape into a ball and cover with a towel. Let rest for 30 minutes on the table. This helps the gluten develop and makes the dough easier to work with.
Step 4
While the dough rests, prepare the filling. Any ground meat will work - I used beef. You can use store-bought or homemade.

Peel and finely dice the onion.

Wash, peel, and dice the potatoes into small cubes (or grate coarsely).
Step 7
Add onion and potato to the meat. Season with salt and pepper. Mix the filling well by hand. If it crumbles too much, add a bit of cold water.
Step 8
Roll the rested dough into a log and cut into equal pieces. Roll each piece into a circle about 1-2 mm thick. Dust with flour if needed.
Step 9
Place a spoonful of filling in the center of each circle.
Step 10
Pinch the opposite ends together in the center, then seal the remaining edges.
Step 11
Join the side corners to form the traditional manty shape. Make dumplings from all the dough. I made 15 from two-thirds of the recipe. You can freeze them for later.
Step 12
Grease a skillet lightly with vegetable oil. Place the dumplings in it. Add hot water until it reaches halfway up the dumplings. Cover with a lid and place over medium heat. Once boiling, reduce heat.
Step 13
Cook for 30–35 minutes. If the water evaporates halfway through, add a bit more. By the end, the water should be fully absorbed.
Step 14
Serve hot with tomato sauce or sour cream. Enjoy your meal!
