Oven roasted potatoes

A foolproof method for making classic crispy roast potatoes - golden on the outside, fluffy inside, and full of rich flavor. Perfect for any roast dinner.

Preparation
Step 1
Preheat the oven to 200C.
Step 2
Begin by simmering the potatoes in a large pan of salted boiling water for 4-5 minutes, just until the outsides start to soften. Once done, drain them thoroughly and give them a quick shake in the colander or back in the pan to roughen up the edges - this helps create that perfect crispy exterior.
Step 3
Meanwhile, melt lard in a deep, flameproof roasting tray over high heat. Add the potatoes and fry them on each side until they begin to brown.
Step 4
Once they’re lightly browned, sprinkle them with salt and transfer the tray to the oven. Roast the potatoes for 30 minutes, or until they start to take on some color.
Step 5
Turn them over and return to the oven for a further 20-30 minutes, or until beautifully golden-brown and crisp. Serve hot for the ultimate side dish.
