Oven-Baked Yeast Buns with Fruit Preserves

Preparation
Step 1
First make the dough. Use all-purpose flour or bread flour. Melt the butter and let it cool. Before buying yeast, read the instructions. This recipe uses yeast that is dissolved in liquid.
Step 2
Dissolve 1 tbsp of sugar and the yeast in warm milk, 37-40°C (98–104°F). Leave for 10–15 minutes to activate.
Step 3
Add the activated yeast, eggs, sugar, and melted butter to the room-temperature kefir. Mix until smooth.
Step 4
Gradually add the sifted flour mixed with baking soda and salt to the kefir mixture.
Step 5
Knead a smooth, even, non-sticky dough, adding a little more flour if needed. But do not overload the dough with flour, or it will lose its elasticity. It is better to dust the table and rolling pin with flour later while shaping the buns. The dough will take only as much flour as it needs.
Step 6
Shape the dough into a ball, place it in a bowl, cover with plastic wrap, and put it in the refrigerator for 1.5 hours. Turn the oven on to 180°C (350°F).
Step 7
You can replace the fruit butter with jam or another sweet filling. Fruit butter works well in this recipe because it does not spread during baking. It is important to choose a good-quality filling: it should be thick and should not run. For brushing, mix the egg yolk with milk.
Step 8
Punch down the dough and divide it into equal pieces weighing about 50 g (about 1.8 oz) each. Roll each piece into an oval. How do you fold the buns? Make slits on one side of the dough. Place 1 tbsp of fruit butter on the other side. Brush one edge of the dough with the yolk-and-milk mixture. Cover the filling with the half that has the slits and pinch the edges closed. Place the shaped buns on a baking sheet lined with parchment paper, leaving space between them. Brush the buns with beaten egg.

Bake in a preheated oven at 180°C (350°F) for 20–25 minutes, until golden brown.
Step 10
Transfer the yeast buns with fruit butter on kefir to a plate and serve them warm with milk, tea, cocoa, or coffee. Enjoy your meal!
