Oven-Baked Vegan Apple Cake

Preparation
Step 1
Prepare the ingredients. You can use freshly squeezed or packaged juice, but it should be sweet. Choose tart apples, such as Granny Smith, and adjust their amount to taste. Use all-purpose wheat flour and any refined vegetable oil. Preheat the oven to 350°F.
Step 2
Combine all the dry ingredients except the flour in a large bowl and mix thoroughly. Cinnamon and vanilla are enough for a classic flavor, but you can also add ground cloves, ginger or nutmeg, if desired.
Step 3
Combine the juice and vegetable oil in a separate bowl, then add the mixed dry ingredients. Sift the flour and add it gradually in several batches. You may need slightly more or less flour depending on its quality.
Step 4
Whisk the mixture thoroughly until smooth. The batter should be fairly runny, with a consistency similar to thick sour cream. Use a wide, shallow baking dish with low sides. A thick layer of runny batter may not bake through properly.
Step 5
Rinse the apples, remove the cores and cut them into thin slices. You can peel the apples or leave the skins on. Adjust the amount depending on how much fruit you prefer in the cake.

Add the apples to the batter and mix gently with a spatula or spoon. Leave the mixture to rest for about 10 minutes so the apples absorb some of the batter. Meanwhile, grease a heatproof baking dish with vegetable oil.
Step 7
Pour the batter into the prepared dish and bake for about 30 minutes. Cover the top with foil if the apples begin to brown too quickly. The exact baking time will depend on your oven and the size of the dish.
Step 8
While the cake is baking, prepare the mixture for the caramel crust. Combine the vegetable oil and sugar, stirring until the sugar dissolves.
Step 9
Pour the prepared syrup over the hot cake and return it to the oven for another 10–15 minutes, until golden with a crisp crust. You can use only part of the syrup, if desired. Check the cake with a wooden skewer. If it comes out dry, the cake is ready.
Step 10
Serve the apple cake warm or cooled. Garnish with mint leaves or add a scoop of plant-based ice cream, if desired. It is perfect for breakfast or a sweet snack with coffee, tea or another favorite drink.
