Preparation
Step 1
Prepare the ingredients. Use fresh, thin Armenian-style lavash. If you have 1 large sheet, use it whole. If using 2 smaller square sheets, place them one on top of the other. For the sauce, use sour cream and tomato sauce. You can replace the tomato sauce with ketchup, crushed tomatoes or tomato paste. Mayonnaise can be used instead of sour cream.
Step 2
Preheat the oven to 350°F. Spread the lavash sheet on the work surface. If using 2 sheets, place one on top of the other. Combine the sour cream, reserving 1 tablespoon for brushing the top, with the tomato sauce. Season with salt and other spices to taste. Add a spoonful of mustard for a slightly sharper flavor, if desired. Spread the sauce evenly over the lavash, leaving a narrow border around the edges.
Step 3
Coarsely grate the cheese and spread it evenly over the sauce. Adjust the amounts of cheese and sausage according to your preference. Choose a good-quality cheese that melts well.
Step 4
Cut the sausage into small sticks or cubes and scatter it evenly over the cheese.
Step 5
Rinse and dry the tomatoes. Cut them into rounds or half-rounds and arrange them over the sausage.
Step 6
Rinse and dry the bell pepper. Remove the stem and seeds, then cut the pepper into small cubes. Scatter them over the tomatoes.
Step 7
Rinse and dry the dill. Chop it finely and sprinkle it evenly over the filling. You can replace the dill with other fresh herbs.
Step 8
Roll up the filled lavash as tightly as possible. Place the roll seam-side down in a baking dish lined with parchment paper or lightly greased with oil. You can also place it directly on a baking sheet. Brush the top with the reserved sour cream. Bake in the preheated oven for about 15 minutes. Adjust the baking time according to your oven.
Step 9
Remove the baked lavash roll from the oven and leave it to cool slightly. Cut it into slices approximately ¾–1¼ inches thick. Serve warm or cooled.
