Oven-Baked Stuffed Bell Peppers with Meat and Sour Cream

Preparation
Step 1
To make tasty stuffed bell peppers, prepare the necessary ingredients and spices. Turn on the oven in advance - about 10–30 minutes before baking - so it reaches the right temperature.
Step 2
Prepare 1 kg (about 2.2 lb) homemade ground meat to your taste.
Step 3
Grate 1 large carrot into a large bowl using a coarse grater.
Step 4
Grate 2 onions into the bowl using a coarse grater.
Step 5
Add the prepared ground meat to the bowl with onion and carrot. Then add 200 g slightly undercooked rice, 1 tsp salt, and a black-and-red pepper mix to taste.
Step 6
Mix all ingredients well with your hands.
Step 7
Slice half an onion into half-rings, slice 1 tomato into rings, and cut 1 carrot into pieces using a crinkle cutter (decorative knife).
Step 8
Spread half of the sliced vegetables evenly over the bottom of a deep pot or deep baking dish.
Step 9
Fill the cleaned and well-rinsed bell peppers with the prepared meat mixture.
Step 10
Pack the filling firmly into the peppers using a fork.
Step 11
Layer the stuffed peppers in the pot over the vegetables.
Step 12
Cover the peppers with a layer of the remaining sliced vegetables, add a few pieces of hot red pepper to taste, and pour in boiling water.
Step 13
Cover the pot with a lid and bake in an oven preheated to 200°C / 392°F for 40-50 minutes.
Step 14
For the sauce, put 200 g sour cream in a bowl.
Step 15
Add 100 g tomato sauce or tomato paste.
Step 16
Add 1/2 tsp khmeli-suneli and 1/3 tsp ground coriander.
Step 17
Add 2 garlic cloves, pressed through a garlic press.
Step 18
Add 1/3 tsp salt.
Step 19
Mix everything well. If you like, add 1–2 tablespoons of water to adjust the sauce consistency (thicker or thinner). It’s best to use neutral-tasting filtered or bottled water - tap water can add an unpleasant flavor.
Step 20
After 50 minutes, remove the pot with the peppers from the oven.
Step 21
Spoon the prepared sauce over the peppers, add bay leaf to taste, reduce the oven temperature to 150°C / 302°F, and return the pot to the oven until the dish is fully done.
Step 22
After 20 minutes, remove the pot with peppers in sour-cream sauce from the oven and portion onto plates.
