Oven baked salmon and couscous

A quick and healthy baked salmon parcel recipe with fluffy couscous, green beans, and Mediterranean flavours. Pperfect for a weeknight dinner.

Preparation
Step 1
Preheat the oven to 220C. Prepare four sheets of kitchen foil or baking paper, each about the size of an A4 sheet.
Step 2
In a heatproof bowl, pour in the boiling water and dissolve the stock cube by stirring. Add the couscous, sun-dried tomatoes, olives (if using), lemon zest, parsley (if using), a pinch of salt, and a bit of ground black pepper. Stir well, then cover the bowl with a large plate and let it stand for 3 minutes.
Step 3
Divide the couscous mixture evenly between the four pieces of foil, placing it on one half of each sheet. Add green beans on top of the couscous, then lay a salmon fillet over the beans. Squeeze lemon juice over the salmon, drizzle with a little olive oil, and season with freshly ground black pepper.
Step 4
Fold the foil over the fish and tightly seal the edges to create a parcel. Repeat this process for the remaining portions. Transfer all four parcels to a baking tray and bake for 15 minutes.
Step 5
When ready to serve, carefully open each parcel to release the steam safely.
