Oven-Baked Saffron Cod with Onions
Delicious oven-baked saffron cod with a crispy crust. Oven-Baked Saffron Cod with Onions is a great substitute for fried fish, and it turns out less greasy than fish cooked in a pan. You also do not need to stand by the stove, worry about getting burned by hot oil while turning the fish, or fear that it will fall apart.

Preparation
Step 1
Prepare all the necessary ingredients for saffron cod. We will cook it in the oven by baking it. Saffron cod is sold either whole or gutted without the head. I prefer buying whole fish and preparing it myself. This way, I know for sure that the fish is fresh. Turn the oven on to preheat to 180°C / 356°F.
Step 2
Thaw the saffron cod in the refrigerator, if needed. Then scrape off the scales with a knife. This is very quick, because the scales are small and come off easily. Next, cut off the fins with scissors, then cut off the head and tail. Open the belly and remove the innards, making sure to remove the black membrane from the inside of the belly. Rinse the saffron cod under cold water and pat dry with a paper towel. If the saffron cod is large, you can cut it into pieces.
Step 3
Place the prepared fish in a bowl, season with salt and pepper, add 1 tablespoon of vegetable oil, and mix. The saffron cod needs to be coated with oil, salt, and pepper. Leave it to rest for 5 minutes.
Step 4
Peel the onions, rinse them, and cut into half rings. Place the onions in a baking dish, season with salt, and drizzle with 1 tablespoon of vegetable oil. Mix the onions and spread them in an even layer over the bottom of the dish. We need them not only for flavor, but also as a base so the fish does not stick to the bottom.
Step 5
Pour the flour into a bowl, place the fish in it, and coat the fish in the flour.
Step 6
Place the breaded fish on top of the onions in the baking dish.
Step 7
Put the baking dish with the saffron cod into the hot oven and bake for 30 minutes, until cooked through and golden brown. Remove from the oven. The baked saffron cod is ready.
