Oven-Baked Potato Baskets with Filling
Versatile baskets, or tartlets, made from mashed potatoes. This is the simplest and quickest way to make baskets for serving salads and various appetizers. Here is my version of serving a “herring under a fur coat”-style salad.

Preparation
Step 1
For the potato baskets, take 3–4 large potatoes. Peel the potatoes and boil them in salted water until tender.
Step 2
Then make mashed potatoes, adding the specified amount of butter. Carefully beat a raw egg into the mashed potatoes, making sure it does not curdle, and mix well so there are no lumps. Leave the mashed potatoes to cool. There is one nuance here: depending on the type of potatoes, you may need to add a little flour to the mash to bind the potato dough. I usually add 2 tablespoons of flour.
Step 3
Make baskets from the cooled mash. For this, you will need silicone cupcake or muffin molds. If the molds are not silicone, grease them with vegetable oil beforehand.
Step 4
Place small portions of mashed potatoes, about 1 heaped tablespoon each, into the molds. With hands moistened with water, carefully spread the potato mixture inside each mold over the whole surface. Put the potato baskets into an oven preheated to 180°C / 356°F and bake until golden, about 15–20 minutes.
Step 5
Remove the finished baskets from the oven and let them cool slightly so you do not burn yourself. Then carefully take the potato baskets out of the molds and leave them on a wire rack until completely cooled.
Step 6
You can fill these baskets with anything, for example, curd cheese cream with salmon, herring spread, or any favorite salad.
Step 7
I suggest trying a new version inspired by “herring under a fur coat.”
Step 8
Clean the herring of skin and bones, and separate the fillets. Finely chop half of one herring fillet. The amount of herring depends on how much you like it and how salty the herring itself is. Hard-boil the egg. Grate the beetroot and egg on a coarse grater. Add finely chopped onion, which can also be pickled. Dress with mayonnaise. Season with freshly ground black pepper. Mix well.
Step 9
Fill the potato baskets with the prepared “fur coat” salad, then place a piece of herring on top and decorate with onion rings.
