Oven-Baked Pork with Apples
Incredibly tasty, original, and pleasantly zesty - perfect for a festive table! While the pork with apples is still baking, it already teases with its aroma. The meat turns out exceptionally tender, juicy, and appetizing. It’s easy to slice into portions and serve on its own, with a side dish or a salad - and it looks beautiful, too!

Step 1
How to bake pork with apples? Prepare the ingredients. I used pork loin; you can also use a not-too-fatty neck cut, ham, or tenderloin. Apples are best if they’re large and sweet-tart.
Step 2
First make the marinade. You’ll need 1 apple. Peel it and remove the core, cut into pieces, and blend with an immersion blender into a purée. You can also grate the apple on a fine grater.
Step 3
Rinse a sprig of rosemary and strip off the leaves. Fresh rosemary can be replaced with dried.
Step 4
In a bowl, combine the apple purée, paprika, coriander, and olive oil. Add salt, rosemary leaves, and ground black pepper, and mix well. If the pork is fattier, reduce the olive oil to 2 Tbsp.
Step 5
Rinse the pork and pat dry with paper towels. Make crosswise cuts about 1 cm apart (about 0.4 in), stopping about 1 cm (0.4 in) from the bottom so you create “pockets.”
Step 6
Rub the meat all over and inside the pockets with the apple marinade. Cover with plastic wrap and marinate in the refrigerator for 4-5 hours, ideally overnight. The longer it marinates, the tastier the finished dish will be.
Step 7
Cut the remaining apples in half and remove the cores. Slice into wedges at least 0.5 cm thick (about 0.2 in). Don’t slice too thin, so the apples keep their shape while baking.
Step 8
Place the marinated meat in a baking dish. Insert 2 apple slices into each pocket. You can also arrange apple wedges between the meat and the sides of the dish - this helps prevent the meat from sticking during cooking.

Cover the dish with foil.

Bake in a preheated oven at 180-190°C (356-374°F) for about 1 hour. Then remove the foil and bake for another 25 minutes, until the top is nicely browned. Check doneness with a knife - the meat should be tender. Cooking time may vary depending on your oven, so adjust time and temperature as needed.
