Oven-Baked Pork Roast with Potatoes

Preparation
Step 1
How do you make oven-baked pork roast with potatoes? Prepare the ingredients. You can use any pork, but a piece with a little fat works best here. If the meat was previously frozen, thaw it in the refrigerator or defrost it in the microwave. Wash and dry the vegetables.
Step 2
Preheat the oven to 200°C / 392°F. Rinse the meat, dry it, and cut it into medium cubes. Place the pieces of meat in a bowl, season with salt and pepper, and mix. You can also use your favorite spices and seasonings. Grease a baking dish with oil and place the pork pieces in it. Pour in a little water; the exact amount depends on the diameter of your dish. The water should cover the bottom.
Step 3
Place the dish with the meat in the hot oven and bake for 20 minutes. The pork should become almost cooked through.
Step 4
Remove the meat from the oven, but do not turn the oven off yet. Add the mustard, if using, to the meat and mix thoroughly. You can use any mustard you like.
Step 5
Peel the carrot and cut it into strips. I prefer this cut, but you can also cut it into wedges, medium cubes, or grate it on a coarse grater. Add the carrot to the baking dish with the baked meat.
Step 6
Peel the onion and finely chop it. Add the onion to the pork and carrot. To reduce eye irritation when cutting onion, rinse the onion and knife with cold water. A cutting board will not absorb the strong onion smell if you rub it with a piece of lemon before cutting.
Step 7
Cut the tomato into large cubes. You can remove the skin beforehand if desired. Add the tomato to the other ingredients.
Step 8
Peel the garlic and chop it finely, or use a garlic press. Add it to the dish with the meat and vegetables. Season the vegetables on top with salt and pepper to taste.
Step 9
Peel the potatoes, rinse them, and cut them into wedges, sticks, or cubes. Arrange the potatoes so they completely cover the vegetables. Season with salt and pepper. It is important to cut the potatoes into slices of the same thickness and size, but not too thick, otherwise they may not bake through. For baking, it is better to choose potato varieties with a medium starch content. The potatoes can be blanched beforehand.
Step 10
Return everything to the hot oven, reduce the temperature to 180–190°C / 356–374°F, and bake for about 40–50 minutes, until the potatoes are done. The exact baking time and temperature depend on your oven. If the potatoes have already browned on top but are not cooked through inside, cover them with foil and continue baking.
Step 11
Remove the dish with the roast from the oven, mix, and serve on plates.
