Preparation
Step 1
How do you bake hand pies with fruit butter in the oven from yeast dough? Prepare all the necessary ingredients for the dough. Choose milk with a higher fat content. Use all-purpose flour. For the filling, you can use any fruit butter: apple, pear, plum, or apricot. It is best if it is thick, because that makes it easier to work with. If the fruit butter is too thin, you can simmer it on the stove to evaporate excess moisture or add a little starch to thicken it.

Warm the milk slightly in the microwave at medium power or on the stove over low heat, stirring constantly. It should be slightly warm, just a bit warmer than body temperature. If you overheat the milk, the yeast will die in the hot milk and the dough will not rise.
Step 3
Pour a little of the warm milk into a bowl, add the sugar, salt, and dry yeast. Stir the mixture and leave it in a warm place for 15 minutes so the yeast can activate. If a foamy cap appears on the surface, the yeast is fresh and you can continue.

In a deep bowl, mix the remaining milk and the eggs.

Sift part of the flour into the bowl and mix until smooth. Sifting adds air to the flour, and the finished dough will turn out more tender and fluffy.

Pour in the yeast mixture and mix everything well again.

Sift in the remaining flour little by little and knead a soft, elastic dough, adding a little more flour if needed. Depending on the quality of the flour, you may need slightly more or slightly less. Cover the dough with a towel and leave it in a warm place for 30-40 minutes.

Punch down the risen dough and divide it into small equal pieces. I got 20 pieces.

Roll each piece of dough slightly into a circle with a rolling pin or simply stretch it with your hands. Do not roll it too thinly, otherwise the dough may tear and the filling will leak out. Place 1-2 teaspoons of fruit butter in the center of each circle.

Bring the edges of the dough together and pinch them tightly closed. Shape all the remaining hand pies the same way. Turn the oven on to 180°C (350°F).

Place the hand pies on a baking sheet lined with parchment paper, leaving a little space between them, and let them proof for 10 minutes. If you are baking without parchment directly on the baking sheet, grease it with vegetable oil.

For brushing the hand pies, you will need an egg yolk and a little milk.

Combine the yolk with the milk and stir.

Brush the hand pies with the yolk mixture using a pastry brush. Bake the hand pies in an oven preheated to 180°C (350°F) for about 25 minutes, until golden brown. The exact time and temperature depend on your oven. If you want a darker crust, leave the hand pies in the cooling oven for 5-7 more minutes.

The hand pies with fruit butter are ready. Let them cool slightly and serve. While they are still hot, the filling inside will be fairly runny, but it will thicken a little as they cool. Enjoy!
