Oven-Baked Greenling
Tasty, with vegetables, under a cheese crust! Greenling is a wonderful fish with tender flesh and few bones. It bakes very simply and quite quickly in the oven. With almost no effort, you’ll get a complete fish main course.

Step 1
How to bake greenling in the oven? First, prepare all the needed ingredients. If the fish is frozen, place it in a container on the bottom shelf of the refrigerator and keep it there until fully thawed.
Step 2
Scale the greenling and rinse under cold water. The scales are quite small and cling tightly. Use a fish scaler, or quickly pour hot water over the fish (about 80°C / 176°F) - not boiling, or you’ll cook the top layer. Remove the head and innards, rinse again, pat dry, and cut into serving pieces.
Step 3
Put sour cream in a bowl, then add vegetable oil and lemon juice.
Step 4
Add salt and black pepper to the sour-cream mixture. Black pepper can be replaced with white or green pepper.
Step 5
Add dried herbs. Use dried herbs specifically - fresh herbs may burn during cooking and lose their color.
Step 6
Pour in water and mix everything well.
Step 7
Grease a 16×21 cm (about 6.3×8.3 in) baking dish with vegetable oil. Peel the carrot, grate it on a medium grater, and spread it evenly over the bottom.
Step 8
Peel and chop the onion, then scatter it over the carrot.
Step 9
Peel the potatoes and slice into thin rounds; layer them over the vegetables. The thinner the slices, the faster the potatoes will cook.
Step 10
Dip each piece of fish into the sour-cream mixture and place it on top of the potatoes. Pour the remaining sour-cream mixture into the dish and gently shake it so the liquid spreads evenly.
Step 11
Put the dish into a hot oven and bake at 180°C / 356°F for 40 minutes. Adjust to your oven - the potatoes should be fully cooked. Remove the dish from the oven. You can serve it now, but it’s tastier under a cheese crust.
Step 12
Grate the cheese on a medium grater and cover the top of the fish and potatoes. Return to the oven and bake 5-10 minutes more, to your liking. Remove and serve immediately.
