Oven-Baked Duck Breasts with Apples

Step 1
Which apples are best? Sweet or sweet-and-sour apples work well. If using tart apples, add a pinch of sugar or 1 teaspoon honey to the ingredients.
Step 2
Rinse the duck breasts and pat dry with paper towels. The skin should have no excess moisture. Score the skin with a sharp knife. Lightly salt and pepper the meat. Massage to distribute seasoning evenly.
Step 3
Take a heavy-bottomed skillet. Brush the bottom lightly with vegetable oil. Place breasts skin-side down over high heat. Once the skillet is hot, reduce heat to medium and cook about 4 minutes.

Meanwhile, wash and dry the apples and garlic. Peel if desired. Slice apples and garlic cloves.
Step 5
Flip the duck breasts and sear the other side for 4-5 minutes. Remove the seared meat onto a plate.

In the skillet with rendered duck fat, add apples, garlic, butter, salt, and spices to taste. Slightly increase the heat.

Stir constantly and cook slices for about 1 minute, until fully coated with spices and butter.

Place the apples and duck breasts in a baking dish.

Bake in a preheated oven until done. Baking time and temperature may vary depending on the oven and desired doneness. Example: 475°F (240°C) top-and-bottom heat for ~10 minutes. Increase time slightly for fully cooked meat.
