Oven-Baked Chicken Stuffed with Cheese

Step 1
How do you cook chicken with cheese in the oven? Prepare the listed ingredients. Use medium chicken fillets without skin or bones. I use frozen spinach; you can use fresh too - about 1½ cups. I don’t recommend replacing cream cheese or feta - the filling may not hold its shape and can leak out. Paprika is for sprinkling; you can skip it or swap for other spices. If you like it spicier, increase the garlic.

Preheat the oven to 180°C / 356°F. Thaw the frozen spinach and squeeze it well to remove excess liquid. Mine is chopped; if yours is frozen in leaves, chop it. In a deep bowl, combine cream cheese, chopped feta, thawed spinach, and 1 minced garlic clove. Mix until combined; salt if needed. The filling should be tasty and thick.
Step 3
Rinse the chicken fillets with cold water and pat dry with paper towels. Using a sharp knife, cut a pocket in the center of each fillet, leaving about 1 cm (≈0.4 in) uncut on each side. You should get a “pocket.”
Step 4
Spoon the filling into each pocket, packing it tightly through the whole fillet. Let some of the filling remain visible - the fillet doesn’t have to fully cover it.
Step 5
Heat a skillet with vegetable oil and sear each stuffed fillet on both sides for about 5 minutes per side, trying to keep the filling from leaking out.
Step 6
If you like, line a heatproof baking dish with baking paper. Place the seared fillets in the dish and sprinkle each with paprika. Bake in the preheated oven for 10-15 minutes. Check doneness by piercing the fillet with a sharp knife - clear juices mean the chicken is done.
Step 7
Serve the chicken hot. It can be a standalone dish or served with a side of vegetables, rice, or potatoes.
