Oven-Baked Chicken Fillet with Vegetables
Chicken fillet with juicy, vibrant vegetables. Chicken fillet, being the leanest part of the bird, contains very little fat. Because of that, it can be somewhat dry. But this can be fixed by adding vegetables. Juicy vegetables will make the chicken meat more succulent and give it a new flavor.

Preparation
Step 1
Prepare the necessary ingredients for making oven-baked chicken fillet with vegetables. If the fillet is frozen, thaw it at room temperature. But it is better to thaw meat in the refrigerator over several hours. This way the fillet will thaw gradually and release less juice. You can use either hard cheese or processed cheese. Choose the fat content of the sour cream to your taste. If you like, you can replace it with mayonnaise.
Step 2
Rinse the chicken fillet under cold water and dry it well. Cut each fillet crosswise into 2 parts.
Step 3
Pound each piece of fillet on both sides with a meat mallet. Why pound the fillet? To soften the structure of the meat fibers. Thanks to this, the fillet will be more tender after cooking.
Step 4
Salt the fillet and sprinkle it with herbs or any spices you like, to taste.
Step 5
Place the fillet in a separate dish, cover it with a lid, and leave it for 20 minutes so the meat absorbs the seasonings.
Step 6
Meanwhile, prepare the vegetables. Wash them well under running water and dry them. Cut the pepper, remove the seeds and the green part. Dice the pepper into small cubes.
Step 7
Using a sharp knife, cut the tomato into small cubes as well.
Step 8
Rinse the dill, dry it, and chop it finely. You can use parsley instead of dill.
Step 9
Grate the cheese on a medium grater. It will bind the vegetable topping together and give it a delicate creamy flavor.

In a convenient wide bowl, combine the vegetables, herbs, and about 3/4 of the grated cheese. Add the sour cream and, if needed, a little salt. If the cheese is salty enough, there is no need to add salt, especially if you are using mayonnaise. Mix everything well.

Grease the bottom of the baking dish with vegetable oil. Arrange the prepared chicken fillet in it. It is better to place the pieces close to each other so there is not much space between them. This way the fillet will not dry out around the edges while baking and will stay more tender.

Place the vegetable mixture on top of each piece of fillet, pressing it down slightly.

Sprinkle the remaining grated cheese evenly over the top.

Bake the chicken fillet with vegetables in an oven preheated to 180°C (350°F) for 25–30 minutes, until a light golden crust forms. Keep in mind that the cooking time depends on your oven and may vary slightly.

Serve the chicken fillet hot with any side dish made from grains, potatoes, or pasta. Enjoy your meal!
