Oven-Baked Chicken Drumsticks in Foil

Step 1
How do you bake chicken drumsticks in foil in the oven? First, prepare the necessary ingredients. Besides drumsticks, you can use chicken fillet, thighs, or whole leg quarters. You can replace coriander seeds with store-bought ground coriander - it’s the same thing.
Step 2
Rinse the chicken drumsticks and pat them dry.
Step 3
Grind the coriander seeds in a coffee grinder. Choose the grind size to your liking. I ground them finely, but not into dust. If you don’t have a grinder, a manual spice mill works too. As a last resort, put the seeds in a bag and crush them with a rolling pin. Coriander seeds are usually sold as “coriander.”
Step 4
Grate the garlic on a fine grater or press it through a garlic press.
Step 5
Add mayonnaise to the bowl with the drumsticks, then add the ground coriander, garlic, salt, and pepper.
Step 6
Mix well so the drumsticks are coated on all sides with the aromatic mayonnaise mixture.
Step 7
Cover the bowl with plastic wrap and marinate for 1 hour at room temperature, or in the refrigerator if longer. I left the chicken in the fridge overnight.
Step 8
Place the marinated drumsticks individually onto small sheets of foil. Spread any remaining mayonnaise marinade over them. Sprinkle each drumstick with ground paprika.

Wrap the drumsticks in the foil carefully, trying not to press the foil tightly against the meat. If it’s too tight, it will likely stick and tear off together with the skin.

Arrange the foil-wrapped drumsticks on a baking sheet lined with parchment or foil. Bake in a preheated oven at 180°C (356°F) for about 45 minutes.

Then open the foil and return the drumsticks to the oven for another 10-15 minutes (or a bit longer) until a light crispy crust appears.

While the chicken bakes, make the sauce. You can skip it, but it tastes much better with sauce. It’s quick - about five minutes - and needs only a few ingredients.

Peel the garlic and press it through a garlic press or grate it finely.

Rinse the cilantro, pat dry, and chop finely with a knife.

In a bowl, combine clean drinking water, tomato paste, and garlic; mix until smooth.

Taste the sauce. Add chopped cilantro, ground pepper, and salt to taste. Mix again.

Transfer the finished drumsticks to a platter and serve with the tomato sauce. Enjoy!
