Preparation
Step 1
How to bake chicken breasts in soy sauce in the oven? Prepare the ingredients. Use 2 whole bone-in chicken breasts. They can be skin-on or skinless, as you prefer. You can replace them with boneless fillet, but you’ll need more. Chicken can also be replaced with turkey or any other meat you like, but then the cooking time and calories will change.
Step 2
Wash the chicken breasts thoroughly and pat dry with paper towels. Slice lengthwise in half to make 4 pieces.
Step 3
Pack the prepared chicken tightly into a baking dish.
Step 4
Now make the sauce. Rice vinegar can be replaced with balsamic or apple cider vinegar. Olive oil can be replaced with sesame oil. Fresh garlic can be replaced with 1 heaping teaspoon of dried granulated garlic. If you don’t have dried paprika flakes, use regular dried paprika. Keep in mind soy sauce is already quite salty.
Step 5
Peel the garlic and finely grate it or press it through a garlic press.
Step 6
Pour the olive oil into a small saucepan or pot and add the cornstarch.
Step 7
Place the saucepan over medium heat and whisk the oil and cornstarch until smooth - there should be no lumps.
Step 8
Add soy sauce and rice vinegar, then add brown sugar, the minced garlic, ground ginger, ground paprika, and sesame seeds. Mix well and simmer, stirring occasionally, until the sauce thickens.
Step 9
Adjust thickness to your taste. I reduce it until it’s glossy and stretchy but still pourable. This takes about 15 minutes.
Step 10
Brush the chicken breasts with the sauce. If you like, you can pour all the sauce over the chicken, but I prefer to reserve some and baste during baking. Bake in a preheated oven at 180°C / 356°F for about 45 minutes, periodically spooning sauce from the bottom of the dish over the chicken or brushing with sauce from the saucepan. Exact baking time depends on your oven.
Step 11
Remove the cooked breasts from the oven. They should be generously coated with sauce. If all the sauce ran off during baking, let the chicken cool slightly and brush it with the remaining thickened sauce from the saucepan.
Step 12
Transfer the breasts to a serving plate, sprinkle with sesame seeds and finely chopped green onion, and serve. Enjoy!
