Oven-Baked Chicken and Potatoes in Kefir

Step 1
How to marinate chicken in kefir for the oven? First, prepare the ingredients. You can use any chicken parts you like, even a whole chicken. Kefir can be any fat content. Wash the vegetables thoroughly under running water and pat dry with paper towels. Instead of Italian seasoning, you can use any dry spice mix for chicken or meat.
Step 2
Peel the garlic and press it through a garlic press. Pour the kefir into a bowl and add the pressed garlic and dried spices. Pour the kefir marinade over the chicken and leave to marinate for 30 minutes.
Step 3
Peel the potatoes and cut into large chunks. Transfer to a separate bowl.
Step 4
Pour olive oil over the potatoes, press 1 garlic clove into them, add spices, and mix well.
Step 5
Slice the tomatoes into rounds about 1 cm (0.4 in) thick.
Step 6
Place the potatoes on the bottom of a baking dish. I didn’t grease the dish - we’ll have sauce, so nothing will burn.
Step 7
Arrange the tomato slices on top of the potatoes.
Step 8
Place the chicken pieces on top. Pour over any remaining kefir marinade. Preheat the oven to 180-200°C (356-392°F). Bake the chicken in kefir until done. Adjust the exact time and temperature to your oven - it took me 50 minutes. Enjoy your meal!
