Step 1
How do you bake champignons stuffed with chicken and cheese in the oven? Prepare the necessary ingredients. It is best to use large champignons - the bigger, the better, so they can hold enough filling. If your chicken meat is frozen, thaw it beforehand.
Step 2
Carefully rinse the mushrooms under running water. Do not fully submerge them in water, as they absorb liquid like a sponge and become watery. It is better to wipe off any dirt with a sponge. Then, using a knife, separate the stems from the mushrooms, trying not to break the caps. It is enough to slightly cut around the stem and break it off by hand.

Cut the mushroom stems into small cubes.

Wash the chicken fillet and dry it with paper towels. Cut the meat into small cubes as well; the smaller, the better, especially if your champignons are not very large.

Wash the herbs, dry them, and chop finely.

Grate the cheese on a medium grater.

Heat a pan and pour in a little oil. Add the chicken fillet and fry it over high heat for several minutes. Stir the meat constantly so the juices seal inside; this will make it more tender.

Add the mushrooms to the chicken. Mix and fry for another 5–7 minutes.

Add the sour cream, salt, and pepper. Mix well and leave to simmer over low heat for about 5 more minutes.
Step 10
Transfer the filling from the pan to another dish and let it cool slightly. Add half of the grated cheese and the herbs. Mix. Preheat the oven to 190°C / 374°F.
Step 11
Grease an ovenproof baking dish with vegetable oil and place the champignon caps in it. Fill them using 2 teaspoons.

Sprinkle each mushroom with the remaining cheese.

Bake the mushrooms for 15–20 minutes in an oven preheated to 190°C / 374°F. The exact time depends on your oven. Serve this appetizer hot, sprinkled with herbs. Enjoy!
