Oven baked burrito

Crispy baked turkey burritos packed with seasoned meat, melted cheese, and fresh tomato flavour - a satisfying and easy-to-make dinner that’s perfect for busy weeknights.

Preparation
Step 1
Preheat the oven to 200C.
Step 2
Roughly chop the onion and cook it in a dash of oil in a large frying pan over medium heat for 7-10 minutes, until softened and translucent. Be careful not to let it brown - reduce the heat if needed.
Step 3
Cut the turkey into 2½cm/1in cubes and add to the pan along with the seasoning (you can use Mexican type of seasoning or others that you like). Stir occasionally and cook for 10 minutes, ensuring the turkey is fully cooked and no pink remains.
Step 4
Grate the cut sides of the tomatoes directly into the pan using a cheese grater, discarding the skins. Stir the tomato pulp into the mixture and raise the heat slightly. Cook for 3-4 minutes, until the sauce thickens and coats the turkey. Add the sweetcorn and stir again.
Step 5
Lay the tortilla wraps out on a chopping board. Spoon the filling into the centre of each, sprinkle over grated cheese, then fold the sides inward and roll from the bottom up to form burritos.
Step 6
Place the burritos seam-side down on a baking tray. Rub a small amount of oil over each wrap using your hand. Bake in the oven for 7 minutes, then flip and bake for another 5 minutes until the wraps are crisp and golden on all sides.
