Preparation
Step 1
Prepare the ingredients. You can use beef, pork, lamb, chicken or turkey. The vegetables can also be adjusted or replaced to taste.
Step 2
Sort through the buckwheat, rinse thoroughly under cold water and drain well in a sieve. You can replace buckwheat with another grain, but the cooking time may need to be adjusted.
Step 3
Pat the pork thoroughly dry and cut it into small pieces. Use boneless pork such as ham, shoulder, loin, neck or tenderloin.
Step 4
Cut the carrot into small sticks, cubes or rounds.
Step 5
Peel the onion and cut it into cubes or half-rings. If desired, replace it with another vegetable such as bell pepper.
Step 6
Peel and finely chop the garlic.
Step 7
Heat vegetable oil in a frying pan over medium heat. Add the onion and carrot and cook, stirring, until lightly golden.
Step 8
Add the garlic and cook everything together for another 1 minute. Transfer the sautéed vegetables to a bowl.
Step 9
Return the pan to medium heat and add a little more vegetable oil if needed. Add the pork and cook, stirring, until lightly browned. Transfer it to the bowl with the vegetables.
Step 10
Add the buckwheat to the pork and vegetables. Season with salt and ground black pepper, then mix well.
Step 11
Transfer the mixture to a baking dish and spread it evenly. Pour in enough warm water or broth to almost completely cover the ingredients.
Step 12
Cover the dish with foil and bake in an oven preheated to 355°F for 25–30 minutes. Turn off the oven and leave the covered dish inside for another 20 minutes. Divide the buckwheat with pork and vegetables between plates and serve.
