Preparation
Step 1
Sift the flour in advance to aerate it. You can use any greens; I use green onions.
Step 2
Heat the milk and add dry yeast, sugar, and salt.
Step 3
Gradually add the sifted flour and knead the dough. You may need slightly more or less flour, adjust for consistency.
Step 4
The dough should be soft, elastic, and almost non-sticky. To avoid adding extra flour, coat your hands with vegetable oil and knead the dough. Cover the dough with a towel and leave in a warm place for 1 hour to rise.
Step 5
For the filling, grate two types of cheese on a coarse grater. Add chopped greens and salt to taste. Mix thoroughly.
Step 6
Roll the risen dough into a circle and place the filling in the center, leaving the edges free. I use a generous amount of filling for better flavor.
Step 7
Gather the edges of the dough in the center and pinch them together tightly.
Step 8
Turn the pastry over seam-side down and roll slightly into a circle about 30-35 cm in diameter. Make a small hole in the center for steam to escape. Bake in a preheated oven at 180°C (356°F) for approximately 30 minutes, adjusting to your oven.
Step 9
The pie should turn a golden color. Remove from the oven and immediately brush with butter. Serve hot. Enjoy!
