Orange Muffins (Oven-Baked)
From simple ingredients - very tasty and very easy! The orange muffins are still baking, and the aroma is incredible - you can’t help but get hungry! Fluffy and tender, they’re simple and quick to make. In under an hour you’ll have a lovely table set for tea time!

Step 1
How to bake orange muffins? Measure out the ingredients. Take the butter out of the fridge in advance so it softens at room temperature. Choose a large, juicy, sweet orange.
Step 2
Mix the flour with the baking powder and sift into a wide bowl. Sifting aerates the flour and makes the bake fluffier.
Step 3
Wash and pat dry the orange. Zest the orange (only the thin orange layer). Squeeze the juice (with a citrus juicer or by hand). I got 65 ml juice (about 1/4 cup + 1 tsp).
Step 4
Combine the softened butter with sugar and vanilla sugar (vanilla extract or vanillin can be used instead).
Step 5
Beat with a mixer until pale and fluffy.
Step 6
Add the eggs one at a time, beating well after each addition.
Step 7
Add the next egg only after the previous one is fully incorporated.
Step 8
Add the orange zest and juice and mix well.
Step 9
Add the sifted flour with baking powder and mix thoroughly until no lumps remain.
Step 10
The batter will be smooth and thick - like thick sour cream.
Step 11
Spoon the batter into muffin cups. Fill each cup to 2/3 full, because the muffins will rise while baking.
Step 12
Bake in a preheated oven at 180°C / 356°F for 20-25 minutes until golden. Check doneness with a wooden skewer - if it comes out dry from the center, they’re done. Baking time may vary by oven. I got 12 small muffins.
Step 13
Cool the muffins and serve. If you like, dust with powdered sugar before serving. Enjoy!
