Omelette with ham and cheese

Step 1
Crack the eggs into a mixing bowl, beat gently, and season with salt and pepper.

Melt the butter in a frying pan until it begins to foam, then pour in the eggs. Allow to cook briefly until the base is lightly set, then use a spatula to push the cooked edges into the uncooked center. Continue this process, letting more of the egg set each time, until the omelette is mostly cooked but still soft in the middle.
Step 3
Place the grated cheese and three-quarters of the finely chopped ham in the center of the omelette and cook gently until the cheese melts. Increase the heat to high and cook for a further 30 seconds, allowing the bottom to turn golden brown.
Step 4
Fold the omelette in half, tilt the pan slightly to slide it onto a serving plate, and shape into a neat roll. Finish by sprinkling over the remaining ham before serving.
