Preparation
Step 1
Prepare the ingredients. The original recipe uses apple and pear purée, but you can choose any fruit purée you like. Rolled oats that require longer cooking work well for this recipe.
Step 2
Pulse coarse rolled oats in a blender until finely ground or flour-like. If you prefer more texture, leave them coarser. Fine oats may not need grinding at all.
Step 3
Use any mixture of dried fruit and nuts you like, such as dates, raisins, walnuts, peanuts or almonds. If the dried fruit is very firm, cover it with boiling water for 10–15 minutes, then drain, dry and chop into small pieces. Chop or pulse the nuts as well.
Step 4
You can use store-bought fruit purée or make your own. Bake apples and pears until soft, then blend until completely smooth.
Step 5
Combine the oats, shredded coconut, dried fruit and nuts in a bowl and mix well.
Step 6
Add the fruit purée and stir thoroughly.
Step 7
The mixture should be evenly combined, thick, sticky and slightly tacky.
Step 8
Wet your hands with cold water. Take about 1 tablespoon of the mixture at a time, shape it into a ball and flatten slightly. Arrange the cookies on a parchment-lined baking sheet. Bake in an oven preheated to 355–390°F for about 15–20 minutes, until golden. The exact baking time will depend on your oven.
Step 9
Remove the cookies from the oven and let them cool before serving.
